Regulation (EU) 2024/1141 – What’s New?

- Surface temperature: -0.5°C to 3.0°C
- Relative humidity: Maximum of 85%
- Airflow: 0.2 to 0.5 m/s
- Storage duration: Maximum of 35 days after the post-slaughter maturation period
Additional Requirements:
- Immediate initiation of the dry-aging process after the completion of the post-slaughter aging period.
- Transportation of the meat only after achieving the required temperature and humidity levels.
- Hanging the meat on the bone or using wire racks to ensure optimal air circulation.
- Continuous monitoring of temperature and humidity.
- Air filtration or UV treatment for all air that comes into contact with the meat.
- Hygienic removal of the crust, if trimming is necessary.
